A Cake Pop That Makes You Feel... Good?

Our seasonal Thin Mint muffin is out and we got an idea… MUFFIN CAKE POPS? Move over Starbucks, these are delicious and way healthier! They are also beyond easy to whip up, you’ll just need a little patience for them to set. The cake pops consist of four simple ingredients - one being our thin mint bundle! - and the others likely to already be in your pantry!                             Recipe

The base of this cake pop is simply made by using our Thin Mint muffin drops and rolling them into balls. The coating consists of a combination of dairy-free chocolate chips & coconut butter, making this an anti-inflammatory and immune boosting treat as coconut butter contains lauric acid which contains anti-viral, antibacterial & anti inflammatory properties. What better than a holiday treat that can help boost your immune system and protect you against the many illnesses this season can bring?

 

Let's get into the ingredients & recipe to make this delectable treat!

 

Ingredients

 

  • 1 bundle thin mint muffin drops

  • ¼ cup dairy free chocolate chips

  • 2 tsp coconut oil or coconut butter

  • Sprinkle sea salt

  • Styrofoam to use as a cake pop holder

  • Cake pop sticks  

 

Directions

 

  1. In a pot on low to medium heat, add coconut butter and let melt for a minute or two.

  2. Add your dairy free chocolate chips and stir together for a few minutes until all is melted.

  3. In a bowl, crumble 1 muffin drop at a time per one cake pop. Roll into a firm ball with your hands.

  4. Dip the end of your cake pop stick into the chocolate sauce (this will act as glue for keeping your cake pop on the stick).
  5. Insert your cake pop stick into your rolled muffin ball.  
  6. Pour your chocolate sauce into a separate bowl.

  7. Dip your cake pop into the bowl of chocolate, stick firmly into your makeshift styrofoam platform, place immediately in the freezer.

  8. After a minute or two, take out and sprinkle sea salt, place back in the freezer for an hour to fully solidify. Repeat for all muffins.

  9. Remove from freezer & enjoy!!!
